In the Kitchen with Chef Drew: Sea Urchin and Whole Fish Breakdown

PICO at The Los Alamos General Store will continue its monthly cooking class series in November, with a class on Saturday, November 18, 10 AM to 12 noon, at the restaurant, bar and retail space.
November’s class topic is “Seafood”, featuring Sea Stephanie Fish and another local fisherman, Travis Meyer. The class will cover sea urchin breakdown and whole fish breakdown, with the first 1/2 hour dedicated to uni breakdown, then 1/2 an hour of Chef Drew Terp’s preparing a dish with Uni; then, 1/2 an hour of whole fish breakdown, and the last 1/2 hour will feature Chef Drew preparing a fish dish. Theory and sourcing will also be discussed.
Spaces in PICO’s cooking classes are limited! December’s class will cover Bone Broths (Stocks/Soups/Jus).
