This past Spring, Paseo Nuevo welcomed the decadent French sweet shop Le Macaron to Santa Barbara. This is a unique addition to the city of Santa Barbara because it is the only pastry shop of its kind. Alongside their namesake, Le Macaron offers air light croissants, rich coffee, creamy gelato, flavorful lemon meringue pie, exquisite chocolates and delectable éclairs. Hassia Kateb, the owner of Le Macaron’s Santa Barbara location, was inspired to open this storefront because of its easy adaptation into the landscape of Santa Barbara, the city’s warm climate and time-honored architecture are very reminiscent of the French Riviera.
The macarons here have been a hit since the store’s opening last May. The best selling flavors are salted caramel, lavender and rose. The macarons are handmade in their confectionery by talented Chef Didier and his baking team. First, the meringue is whipped from almond flour abiding by a special French recipe–their meringue is made with egg whites and no artificial colors or preservatives. After the meringue has been arranged, the rich ganache is crafted into one of the 20 enticing flavors they offer including white chocolate, earl grey tea, candied ginger, coconut, basil and Colombian coffee. The ganache is piped in between the two delicate pieces of meringue and the macaron is ready to be enjoyed. These unique pastries effortlessly add to the multifaceted culinary landscape of Santa Barbara.
“The macaron is one of the most famous pastries in Europe, especially in France. The macaron is not very known here in the USA, people always think that it is the same as [the] macaroon–but it is totally different. We wanted to share these amazing pastries with the locals,” says Kateb.
